Pork and Potato Curry :)

If I’m to be totally honest about this one it was an accident, it could have turned out awful but luckily it didn’t. It was kind of a mish mash of old recipes I had read, tv shows I had seen and what food I had that needed to be used up. Sometimes when I do this(a lot of the time) I end up with something that resembles a dinner but is always lacking something, but today it worked out. I’m going to my best and try and write up a recipe but the quantities will be a bit rough because I didn’t really pay attention to what I was doing. But sure who cares about that, add whatever you think will work and make it your own….

Ingredients:

2 Pork chops, cut into cubes

1 Red pepper, cored and sliced

1 Large onion, sliced

2 Garlic cloves, diced

1 Green chilli, de-seeded and diced

1 Courgette, cut into cubes

4 Tomatoes, peeled and diced

2 Curry Leaves

2-3 Large waxy potatoes, peeled and cubed

Zest and Juice of a Lemon

2 Tsps of grated fresh ginger

1/4 Tsp Chilli powder

1/4 Tsp Fennel seeds

1/4 Tsp Turmeric

1 Heaped tsp Ground coriander

Salt

Directions:

  1. Heat approx 3 Tbsp of oil in a pan. Add the ginger, garlic, chilli and curry leaves and cook for a minute, stirring all the time.
  2. Now add the chilli powder, turmeric, fennel seeds and ground coriander, mix in the oil and cook for about a half a minute.
  3. Stir in the onion and red pepper, stir and cook for about 10 minutes.
  4. Add the pork, potato, tomato, courgette, lemon zest and give it a good mix. Pour in approx 1 and a half cups of water(depending on how wet you like it), season with salt and bring to the boil. Once it has started to boil reduce to a low heat and leave to simmer for 30 minutes or until the potatoes are tender.
  5. Finally, squeeze in the juice of half a lemon and serve.
